The other day I posted pictures of these on my Instagram story and you guys went crazy for them. They are super easy to make with no weird ingredients. They taste just as good as they look so you definitely need to give them a try. I have a massive sweet tooth and boy do these satisfy those cravings, I’ve been eating them constantly!
There’s often a consensus that vegan bakes are filled strange stuff and just aren’t good, but honestly you could never tell these are vegan. They were so good that they didn’t even last 24 hours in my house hold!! Fresh out the oven and everyone was eager to get their hands on them. I think next time I’ll have to make a double batch.
- 70g Caster Sugar
- 120g Light Brown Sugar
- 100g Vegan Butter (e.g Flora)
- 4 tbsp non dairy milk ( I used almond)
- 1 tsp vanilla paste
- 220g plain flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
- As much vegan/dark chocolate you want
Preheat the oven to 180deg
Mix both the caster and light brown sugar together, then add the ‘butter’ and cream together.
Add in the milk and vanilla extract then mix together to get a smooth. (I used a handheld blender for this)
Stir in the flour, baking soda and bicarbonate until you get a soft dough mixture.
Smash up your chocolate and add some chunks in (I like a lot!)
Separate the dough into 10-12 separate balls.
Bake for 5 minutes then take the trays out and bang then on the side. This makes the cookies flatter and gives them a cracked appearance on top.
Put them back not the oven for another 5 or so minutes.
These are best served warm and gooey, but don’t worry they are still damn good when cooled.
