Vegan Banana Muffins

Banana Bread is one my favourite treats. I can honestly eat a whole loaf just like that. After seeing everyone and their aunt bake a loaf I decided to put my own twist on things and try them as muffins. If you’re apprehensive about vegan baking then these will definitely convert you. They went down an absolute treat with my fam (couldn’t even tell they were vegan!), so if you’re looking for some brownie points at home, definitely give these a go.

Ingredients 

  •  3 bananas (the riper the better)
  • 100g Caster Sugar
  • 40g Soft Brown Sugar
  • 60g vegan butter (e.g. flora)
  • 200g Plain Flour
  • 60g Oats (little extra for topping)
  • 2 teaspoons cinnamon
  • 1 1/2 tablespoons golden syrup
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • Frozen Berries

Method

Preheat the oven to 180 deg.

Use a fork to mash up the bananas in a bowl.

Add the vegan butter and sugar then cream all of them together. If the mixture isn’t becoming consistent and soft I would recommend using a whisk.

In another bowl combine the rest of the dry ingredients (flour, oats, salt, cinnamon, baking soda).

Add the dry ingredients to the banana mix, stirring in small bits at a time. Then stir in the golden syrup.

Line a muffin tin and evenly share the mixture between 10 seperate cases.  Fill up each half way then add a teaspoon of frozen berries then fill up to the top with mixture. Sprinkle a few oats on and then you’re good to go.

Bake in the oven at 180 for 25 minutes. To check they are cooked prick the middle with a skewer and it should come out clean or lightly press your finger on the top and they should bounce back.

I think they are best served warm, but if you prefer them cool they should last well for 2-3 days.
